Recipe for "Stuffed Zucchini"


This recipe can be served as either a sidedish or a maindish.


Zucchini 2
Sausage ( Finely Chopped) 1 package
Dry Bread Crumbs 1/2 cup
Cream Cheese 1 package ( 8 ounces)
Fresh Parsley ( Finely Chopped) 2 tablespoon
Red Capsicum ( Finely Chopped) 1/2
Lemon Juice 1 tablespoom
Garlic ( Minced) 3 cloves
Parmesan Cheese ( Grated) 1/4 cup
Salt 1 teaspoon
Pepper 1 teaspoon
Mozzarella Cheese ( Shredded ) 1/2 cup



Preheat oven to 175 degree C. Trim stems from zucchini and slice lengthwise. Scoop out seeds and put in bowl.


Mix seeds with sausage, garlic, parsley, cream cheese, capsicum, lemon juice, bread crumbs , salt and pepper.


Stuff squash with sausage mixture and place in baking pan. Sprinkle with grated parmesan cheese ( cover baking pan with foil ) .


Bake in preheated oven for 45 minutes or until sausage is cooked. Remove foil and cover with mozzarella cheese. Cook until cheese is melted.
