Cream Cheese | 1 package ( 8 ounces) |
Fresh Parsley ( Finely Chopped) | 2 tablespoon |
Red Capsicum ( Finely Chopped) | 1/2 |
Lemon Juice | 1 tablespoom |
Garlic ( Minced) | 3 cloves |
Parmesan Cheese ( Grated) | 1/4 cup |
Salt | 1 teaspoon |
Pepper | 1 teaspoon |
Mozzarella Cheese ( Shredded ) | 1/2 cup |
Preheat oven to 175 degree C. Trim stems from zucchini and slice lengthwise. Scoop out seeds and put in bowl.
Mix seeds with sausage, garlic, parsley, cream cheese, capsicum, lemon juice, bread crumbs , salt and pepper.
Stuff squash with sausage mixture and place in baking pan. Sprinkle with grated parmesan cheese ( cover baking pan with foil ) .
Bake in preheated oven for 45 minutes or until sausage is cooked. Remove foil and cover with mozzarella cheese. Cook until cheese is melted.
