Vanilla Extract | 1/2 teaspoon |
Ripe Banana (Mashed) | 1 medium-sized |
All-Purpose Flour | 1 cup (sift) |
Baking Powder | 1 teaspoon (sift) |
Baking Soda | 1/4 teaspoon (sift) |
Salt | A pinch |
Walnuts (Chopped) | 1/3 cup |
Preheat oven (top and bottom) to 170 degrees (Celcius). Line and grease a mini loaf pan (8x4 inch). Set aside.
Sift flour, baking powder, baking soda and salt. Set aside.
In a medium-sized bowl, whisk the oil and sugar.
Add egg, vanilla and cinnamon powder and mix well.
Stir in the mashed banana.
Add the sifted flour, baking powder, baking soda and salt. Mix until just combined.
Stir in walnuts (and chocolate chips if using).
Pour into the prepared pan and bake uncovered for 20 minutes and another 5 minutes covered with a foil.
Remove from pan and let cool in the pan for 5 minutes before transferring to a wire rack to cool for another 10 minutes. Best served warm with or without frosting.
