You can also use lemon juice instead of balsamic vinegar.

Ingredients

Yellow Zucchini (Sliced Thinly) 1
Red Onion (Sliced Thinly) 1
Red Bell Pepper 1/2
Olive Oil 2 tablespoons
Balsamic Vinegar 2 tablespoons
Basil Leaves (Minced) Optional 2 leaves,
Salt 1 teaspoon
Pepper 1 teaspoon

Instructions

Toss the zucchini, onion, bell peppers, and basil together in a large bowl.

Drizzle the olive oil and balsamic vinegar over the mixture and toss again to evenly coat.
