Recipe for "Pumpkin & Brinjal Gravy"


Tips

Best to eat with bread/chapati.

Ingredients

Large Onion 1
Green Chilli 1
Garlic 5 cloves
Ginger 2 inches
Coriander Powder 1tsp
Cumin Powder 1tsp
Curry Powder 1tsp
Tomato Puree 1 1/2 tbsp
Brinjal-Medium Sized (Cut Into Small Pieces) 1
Pumpkin (Cut Into Squares) 3 cups
Red Bell Pepper (Chopped) 1
Salt To taste

Instructions

Grind onion, green chilli, garlic and ginger with little bit of water into a paste.

Heat oil in a pan. Put in the brinjal and pumpkin and fry for a minute.

Add in the paste. Mix well and let it cook for about 10 minutes. Stir in between.

Next, add in tomato puree, coriander, cumin, curry powder and salt. Add in some water.

Cook the mixture in low fire for about 30 minutes.
