my husband loves chicken, so I always have to recreate new recipes for chicken so that it will not get boring. inspired by watching lots of videos from Jamie Oliver, Nigella etc

Tips

baste the chicken, with the spice rub leftover mix with some extra virgin olive oil every 20 mins

Ingredients

1 whole chicken (1.5kg)
3 tbsp cajun seasoning
1 tbsp sugar
1/2tbsp salt & pepper
1 tbsp olive oil
1 lemon lemon juice
Whole garlic

Instructions

Clean chicken inside out. If prefer, butterfly the chicken or leave it as per usual. pat to dry

For chicken rub ; mix cajun seasoning, salt & pepper, sugar, olive oil, lemon juice and set aside (adjust the seasoning according to your taste)

Cut the whole garlic in half

Rub the chicken on the chicken thoroughly with the mixed , and the halved garlic into the cavity or under if butterfly.

Let the rub set for 15 mins in the fridge and preheat oven to 200c.

Cook the chicken for 1 hour per kg or until it poked juice runs clearly (not bloody)
