Brown Sugar | 1/2 cup |
Large Eggs | 2 |
Vanilla Extract | 1 teaspoon |
All Purpose Flour | 2 cups |
Baking Soda | 1 teaspoon |
Salt | 1/4 teaspoon |
Old Fashioned Oatmeal | 2 cups |
Baking Powder | 1 teaspoon |
Chocolate Chips (Optional) | 1 cup |
Coconut Flakes (Optional) | 1 cup |
Preheat the oven to 190 degrees C.
Mix butter, granulated sugar and brown sugar.
Add eggs and vanilla extract and mix well.
Add flour, baking soda, baking powder and salt.
Mix well and add oatmeal, coconut flakes and chocolate chips.
Drop some dough on an ungreased baking sheet 2 inches apart.
Bake until the cookies turn light brown, about 8-10 minutes.
Remove from the oven and cool on a baking sheet for 2 minutes before transferring to a wire rack completely. Repeat remaining dough.
