Recipe for "Grilled Peach Salad"


Tips

A grilling pan will give the stripes to your grilled peach, makes it look yummier.

Perfect as a side dish for grilled meat (e.g chicken, beef or lamb).

Can also be a delicious topping for toast, rye crisps or even Hup Seng biscuits!

Ingredients

Peach - Cut Into Wedges 1
Red Onions (Chopped) 1/2 cup
Japanese Kyuri Cucumber (Chopped) 1/2 cup
Cherry Tomatoes (Chopped) 1 cup
For The Dressing:
Lime Juice 1 piece
Olive Oil 1 tbsp
Salt And Pepper To taste

Instructions

How to prepare dressing

Mix lime juice, olive oil, salt and pepper and whisk until it emulsifies. Season according to taste.

How to prepare salad

Coat the peach wedges with some olive oil

Grill the peaches in a grilling pan until soft and charred (the juices of the peach will caramelise)

When done, mix all the ingredients with the dressing. The peaches will become a little mushy and release its sweetness into the salad.
