Recipe for "Pineapple Shrimp Fried Rice"


Tips

You can use uncooked long grain rice or white rice or any kind of rice of your choice.

Ingredients

Chicken Broth 2 cups
Uncooked Brown Rice 1 cup
Garlic 1 clove
Onion, Chopped 1 medium
Green Pepper 1 medium
Vegetable Oil 2 tablesppons
Soy Sauce 2 teaspoons
Ground Ginger 1/4 teaspoon
Cooked Medium Shrimp, Peeled 2 1/4 cups
Boneless Chicken, Cut Into Cubes 1 1/2 cups
Can Pineapples, Drained 3/4 cups

Instructions

In a large pan, bring broth to boil. Stir in rice. Reduce heat. cover and simmer for 25 minutes or until tender.

In another pan, saute the garlic, onion and green pepper in oil until tender.

Stir in soy sauce and ground ginger. Add shrimp, chicken and pineapple.

Add in cooked rice into the shrimp mixture. Ready to serve.
