Pineapple Shrimp Fried Rice

Got the recipe from a friend of mine. When i first tried it, my husband loved it. It's healthy too!

Tips

You can use uncooked long grain rice or white rice or any kind of rice of your choice.

Ingredients

2 cups chicken broth
1 cup uncooked brown rice
1 clove garlic
1 medium onion, chopped
1 medium green pepper
2 tablesppons vegetable oil
2 teaspoons soy sauce
1/4 teaspoon ground ginger
2 1/4 cups cooked medium shrimp, peeled
1 1/2 cups boneless chicken, cut into cubes
3/4 cups can pineapples, drained

Instructions

In a large pan, bring broth to boil. Stir in rice. Reduce heat. cover and simmer for 25 minutes or until tender.

In another pan, saute the garlic, onion and green pepper in oil until tender.

Stir in soy sauce and ground ginger. Add shrimp, chicken and pineapple.
