Grilled Peach Salad

I had some overripe peaches in the kitchen, so I thought I'd turn it into some mushy goodness (overripe peaches becomes a little less crunchy so it's not that fun to eat it raw).

Tips

A grilling pan will give the stripes to your grilled peach, makes it look yummier.

Perfect as a side dish for grilled meat (e.g chicken, beef or lamb).

Can also be a delicious topping for toast, rye crisps or even Hup Seng biscuits!

Ingredients

1 peach - cut into wedges
1/2 cup red onions (chopped)
1/2 cup japanese kyuri cucumber (chopped)
1 cup cherry tomatoes (chopped)
For The Dressing:
1 piece lime juice
1 tbsp olive oil
To taste salt and pepper

Mix lime juice, olive oil, salt and pepper and whisk until it emulsifies. Season according to taste.

Coat the peach wedges with some olive oil

Grill the peaches in a grilling pan until soft and charred (the juices of the peach will caramelise)

When done, mix all the ingredients with the dressing. The peaches will become a little mushy and release its sweetness into the salad.
