Recipe for "Cajun Roast Chicken"


Tips

baste the chicken, with the spice rub leftover mix with some extra virgin olive oil every 20 mins

Ingredients

Chicken (1.5Kg) 1 whole
Cajun Seasoning 3 tbsp
Sugar 1 tbsp
Salt & Pepper 1/2tbsp
Olive Oil 1 tbsp
Lemon Juice 1 lemon
Garlic Whole

Instructions

Clean chicken inside out. If prefer, butterfly the chicken or leave it as per usual. pat to dry

For chicken rub ; mix cajun seasoning, salt & pepper, sugar, olive oil, lemon juice and set aside (adjust the seasoning according to your taste)

Cut the whole garlic in half

Rub the chicken on the chicken thoroughly with the mixed , and the halved garlic into the cavity or under if butterfly.

Let the rub set for 15 mins in the fridge and preheat oven to 200c.

Cook the chicken for 1 hour per kg or until it poked juice runs clearly (not bloody)

Serve with mash potatoes/colleslaw/mac & cheese or anything
