I remember wanting to eat pasta salad, googled some recipes. mix & match according to what i have in the kitchen and voila..so nice & refreshing. this meal goes great with roast chicken

Tips

You can mix in cooked sliced chicken and eat as it is.

Ingredients

380g vegeroni spiral (san remo)
Sauce
1/2 cup mayonnaise
1/2 lemon lemon juice
1/2 lemon lemon zest
2 tbsp extra virgin olive oil
To taste salt & pepper
1 tbsp honey
Vegetables Mix
2 stalks carrot (diced)
1 stalk japanese cucumber (deseed & diced)
1 whole capsicum (desees & diced)
1 whole onion (diced)

Boil the spiral according to the packaging around 8 mins, drain and set aside

In a bowl, mix in the ingredients for sauce. stir until all combined. adjust the taste accordingly
