Mango And Kiwi Cheese Tart

I love fruits and I love cheese tart. Often time we feel guilty about savoring a decadent and rich slice(s) of cheesecake/cheese tart. I figured that if I put some fruits on top, it will be healthier for me! The fruits will give us the fibres and vitamins that we need while the cheese tart filling will give us..err..some curves? Anyhoos, this is a family favourite dessert! The fruits are able to cut the richness of the cream cheese filling thus making you crave for more slices than your body needs! This dessert is easy to make and can be made ahead of time! You can go all fancy and arrange them nicely, or you can simply throw everything on top and eat this cheese tart whole using a spoon. No worries, I won't judge.

Tips

1. This is a forgiving recipe. If your fruits are sweet, do cut on the sugar or if you don't mind diabetes, do add more. It will taste fantastic any way!

2. In this recipe, we use a TART pan, and not a PIE pan. Tart pans has straight sides while pie pans have slanted slides. Thus, tart pans require more crust and filling. If you are using a pie pan, you may want to cut down the amount of crust and fillings.

3. This recipe is also versatile, use any fruits that you like to top your cheese tart. Tart fruits like berries/pineapple/passion fruit would be delicious as well!

4. Exposed fruits will dry out, thus it is crucial top your cheese tarts with fruit slices right before serving.

1 cup (250g) digestive biscuit crumbs
1/2 cup (125g) butter, melted
Cream Cheese Filling
3/4 cup (185g) cream cheese, softened
1/2 cup (170ml) whipping cream
1/3 cup (67g) granulated sugar
Topping
2 medium sized ripe mangoes
2 ripe kiwis
