Mix the potato garlic, olive oil, lemon peel, salt and black pepper thorougly in a bowl.

Place 2 layers of aluminium foil on a tray.
Pour the potato mixture onto the aluminium foils, and fold it to cover the mixture.
Place the packet on a grill and cook at 250 calcius for about 30 minutes.
Use scissors to cut an 'X' on top of the aluminium foil to allow steam to escape.
Carefully open to serve.
