Jika kita memasak sambal kerang, tidak digalakkan meletakkan gula terlalu banyak. Kerana sekiranya sambal kerang kote manis, ia akan menyababkan kite berasa loya ketika memakannya. Its prefer jika sambal kerang kite pedas dan sedikit masin.
