Lentils are low in fat, high fiber and good sources of protein and minerals. They are wonderful source of protein for vegetarians. Besides, lentils are highly recommended to pregnant women because they contain folate, magnesium and iron which are prominent minerals during pregnancy.

Ingredients

1 cup french lentils
1 tbsp dijon mustard
1 whole lemon juice
2 tbsp white vinegar
1 tbsp virgin olive oil
1 tsp salt
1/4 cup pasrley
1 whole red onion chopped
1/2 tsp black pepper

Bring a large pot of salted water to boil, add the lentils, turn the heat to medium.

Let it cook just until the lentils are cooked through, about 20 minutes.
