Stuffed Zucchini

This recipe was learnt from my brother in law in Austria.

Tips

This recipe can be served as either a sidedish or a maindish.

Ingredients

2 zucchini
1 package sausage ( finely chopped)
1/2 cup dry bread crumbs
1 package ( 8 ounces) cream cheese
2 tablespoon fresh parsley ( finely chopped)
1/2 red capsicum ( finely chopped)
1 tablespoom lemon juice
3 cloves garlic ( minced)
1/4 cup parmesan cheese ( grated)
1 teaspoon salt
1 teaspoon pepper
1/2 cup mozzarella cheese ( shredded )

Instructions

Preheat oven to 175 degree C. Trim stems from zucchini and slice lengthwise. Scoop out seeds and put in bowl.

Mix seeds with sausage, garlic, parsley, cream cheese, capsicum, lemon juice, bread crumbs , salt and pepper.

Stuff squash with sausage mixture and place in baking pan. Sprinkle with grated parmesan cheese ( cover baking pan with foil ) .

Bake in preheated oven for 45 minutes or until sausage is cooked. Remove foil and cover with mozzarella cheese. Cook until cheese is melted.

Waalaikumussalam... boleh juga guna terung tapi rasanya tak sama dengan zucchini.
