Lime And Passion Fruit Granita

I learnt this recipe from Iron Chef Michael Symon in his cooking show, Symon's Suppers but he prepared lime with watermelon chunk granita. But I found out that lime and passion fruit are a perfect match for granita :)

Tips

if you want your granita less sour, you may add some sugar.

Ingredients

1/2 cup lime juice
4 table spoons passion fruit
1/2 cup caster sugar
1 1/2 cup water

Instructions

Place sugar and water in a medium heavy-based saucepan over low heat. Cook, stirring, for 4 minutes or until sugar is dissolved.

Remove from heat. Stand for 10 minutes.

Stir in lime juice and 3 table spoon of passion fruit. Pour mixture into a container (such as a large cake pan).

Freeze for 3 hours or until just beginning to freeze.

Using a fork, flake mixture to break up ice crystals starting to form. Cover with plastic wrap, then foil.

Freeze for 4 hours, flaking mixture every 1 hour, or until completely frozen. Serve with 1 table spoon of passion fruit on the top.
