Tips

Ingredients

1 cup orange juice
2 teaspoon orange zest
1 cup granulated sugar
1 teaspoon cream of tartar
2 nos egg yolk
3 nos egg white
1/4 teaspoon salt
1 1/2 cup all-purpose flour
60g bran powder
1 teaspoon vanilla extract
1 teaspoon baking powder
60 ml vegetable oil (eg. canola oil)

Instructions

With electric mixer,beat in flour, bran powder, 2 tablespoon of granulated sugar, salt, baking powder and orange zest until well combine.

Make a well in the center, beat in egg yolk, orange juice, oil and vanilla extract until smooth.

In separate bowl, beat at high speed egg white little by little with the remaining granulated sugar and cream of tartar until soft peak forms.

With a large rubber spatula, gently fold the egg whites mixture into the first batter just until blended (being careful not to over-mix the batter).
