Cottage Pie My Style

I went thru lots of of cottage pies recipe, one time on TPP instagram. Decided to make it, and husband ate like nobody's business. It's a very comforting dish and you will never get bored of it.

Tips

Mix the potatoes with sweet potatoes, it'll taste even better.

You can also add cheese (cheddar/colby) in the mash.

Ingredients

Pie Filling
500g minced beef
1 1/2 cups yellow onion (diced)
2 cloves garlic (chopped finely)
1 stalk carrot (diced)
1 stalk celery (diced)
1 whole capsicum (diced)
80g button mushroom (sliced)
2 tbsp worcestershire sauce
1 chicken cube
1/4 cup tomato puree
1/2 cup water
To taste salt & pepper
To taste sugar
3 tbsp flour
2tbsp oil
Mash Potato
500g-800g chad potatoes
1/4 cup milk
25g butter (unsalted)
To taste salt

For the filling - heat up oil (medium high) and fry the beef. Cook the beef until brown

Mix in the onion & garlic. Cook until onion translucent (2-3 mins)

Mix in the carrot, celery and capsicum. Cook about 5 minutes

Mix in the mushroom, let cook for about 1 minute.

Add in the chicken cube, Worcestershire sauce, tomato puree, salt & pepper, sugar.

Put in water, bit by bit - depending on the situation. It should not be too watery. Let it simmer for about 10 - 15 mins (medium heat)

Finally, put in the flour and let the filling cook again about 5 mins. It will be thicken by then,

For the mash potatoes, wash the potatoes and cut in half

Boil potatoes 10 - 15 mins (until fork tender), drain and put in a bowl.

Mix the potatoes with milk, butter & salt. Mash until it becomes soft. Lil bit of lump is fine (depending on your likes)

Bake in the oven for about 30 - 40 mins. Until potatoes become brown / crispy. (anyhow u like)
