Carrot Halwa

This is an Indian sweet that I really love and I got the recipe from my sister in law living in India..

Tips

You may also add 1/4 spoon of cardamon powder before adding the nuts, if preferred.

Ingredients

2 cups carrot
2 cups milk
1/2 or 1 cup sugar
2 tablespoon ghee
1/4 cup nuts&raisins

Wash & peel the carrot & grate them

Heat the ghee in a pan & fry the nuts and raisins-keep aside

Heat the milkin a heavy bottomed pan and add the grated carrot into it

Cover and cook it in medium flame, stirring occassionally to avoid sticking

After about 15-20 minutes, the milk will be absorbed by the carrot and you may add sugar and stir cintinuously

After 8 minutes, oil starts getting separated from the halwa. At this stage add the fried nuts & raisins and 1 tablespoon of ghee

Mix for another minute and switch off. Let it to be cool.
