Fluffy Pancake With Strawberry Coulis (Penkek Gebu Dengan Sos Strawberi)

I always wanted to make fluffy light comforting pancakes as breakfast of any meals of the day. I have tried couples of time to make the best pancake and yes this is the recipe that I am proud to share with all of you. I made this after I did 15 minutes workout (yeah, i cant resist the temptation to eat pancake at that particular time :P )

Tips

1. Let the pancake batter to rest at least 15 minutes after you mix them to have airy light fluffy pancakes.

2. Use non stick pan or heavy skillet pan for the best result.

3. Wait until the bubbles popped off before flipping the pancake.

4. Use medium high heat.

Ingredients

1 1/2 cups all purpose flour
3 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk (fresh/low fat/skim/buttermilk)
1 egg
3 tablespoons butter/margerine (melted)
2 handful strawberry
3 tablespoons (adjustable) sugar

Instructions

In a large bowl, sift together the flour, baking powder, salt and sugar.

Make a well in the center and pour in the milk, egg and melted butter/margerine. Mix until smooth (no lump) and let it rest for at least 15 minutes.

Heat a lightly oiled pan over medium high heat and pour some of the pancake batter onto the pan. Brown both side.

In a sauce pan, simmer the sugar and some water before adding the sliced strawberry. Cook until the strawberry soften.

Serve the pancake hot with some butter and the strawberry coulis.
