I made a couple dozens of pandan cupcakes with gula Melaka frosting for myself last week for celebration mybirthday.

If you can't find daun Pandan, can use Pandan flavor.

Ingredients

Pandan Cupcakes
200g cake flour
1/2 tsp baking powder
125g unsalted butter, softened
1/2 tsp salt
1/2 tsp vanilla essence
200g castor sugar
2 nos eggs
75g coconut milk
2 tbsp pandan juice
A few drops green coloring
Gula Melaka Swiss Meringue Buttercream Frosting
200g gula melaka , crushed
2pcs pandan leaves, torn lengthwise & tied a knot
1/8cup water
3 nos eggs white
60g castor sugar
150g unsalted butter
1 tsp vanilla essence
1/4 tsp salt
Pandan Juice
10pcs pandan leaves,matured,washed & torn into 1-inch pieces
2tbsp water
Salted Gula Melaka Caramel (To Drizzle On The Frosting.)
50g gula melaka
1tbsp water
15g salted butter
30g whipping cream
1/4 tsp salt
